Traditional Drinking Herbs
Flowers have been brewed into tisanes for almost as long as written historical record. The ancient Egyptians, Chinese, Romans, and Indigenous North Americans believed in the rich tapestry of healing that certain flowers offered and incorporated them into their medicinal regimens. Of course, it didn't and still doesn't hurt that the unique character of brewed flowers is quite delicious.
Hot Tea: Bring freshly drawn cold water to a rolling boil. Place 1 1/2 to 2 tsp. of tea for each cup into teapot. Add boiling water, cover and let steep until it is as strong as you like it, milk or sugar is not generally added to the cup.
Iced Tea: (1 litre): Place 12-15 tsp. of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of fresh boiled water over the tea. Steep 5 minutes. Quarter fill a serving pitcher with cold water. Pour tea into serving pitcher straining the leaves. Add ice and top-up pitcher with cold water. Garnish and sweeten to taste.
